Ingredients (serves 4):
For the chicken:
- 2 chicken breasts (or thighs), diced
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- Juice of ½ lime
For the salsa verde:
- 8-10 tomatillos, husked & rinsed
- 1 jalapeño (remove seeds for less heat)
- ½ onion, chopped
- 1 garlic clove
- ½ cup cilantro
- Salt to taste
To serve:
- 8 corn tortillas (warmed)
- Toppings: diced onion, cilantro, crumbled queso fresco (or feta), lime wedges, avocado slices
Instructions (20 mins total):
1️⃣ Cook chicken:
- Toss diced chicken with oil, cumin, paprika, garlic powder, salt, pepper, and lime juice.
- Heat a pan over medium-high, cook chicken for 5-6 mins until golden. Set aside.
2️⃣ Make salsa verde:
- Boil tomatillos and jalapeño in water for 5 mins until soft. Drain.
